Paleo/Vegetarian/Grain Free/Gluten Free/Soy Free/Dairy Free
1/3 cup coconut flour
1/4 cup coconut oil (melted)
3-4 tablespoons honey (raw is best!)
1 1/2 tsp vanilla extract
pinch of salt
handful of dark chocolate chips (go for semi sweet or replace with a 1 1/2 tsp cacao powder to keep sugar down)
This is optional
1 tsp butter – after placing the dough on cookie sheets you can brush the top with butter so they get nice and golden brown
Scoop out onto a parchment lined cookie sheet into the shape you want (these cookies will not flatten during baking). Bake at 350 degrees for 10-12 minutes or until golden brown. WARNING coconut flour burns easily around the edges so keep an eye on them in those last couple minutes.
My favorite way to eat these guys is brushed with a drop of butter and dusted with cinnamon.
