Dessert Anyone?…Healthy Holiday Dessert Options

Balsamic Strawberries with Ricotta 

Grain Free/Gluten Free/Soy Free/Nut Free/Vegetarian 

Makes 6 small or 4 large

This dessert is as visually appealing as it is delicious. Lucky for us it is about as healthy as dessert gets! Move along cheesecake!


You’ll be pleasantly surprised by how sweet and rich this dessert is, but the best part is you can dish out enough for a crowd for less than the cost of a pie and it will take you less time than a trip to the store… did I mention it is only 61 calories and 3g of sugar!!!

Before dinner…

2 Cups fresh chopped strawberries
4 Tablespoons of balsamic vinegar
5 Fresh and chopped basil leaves
2 Pinches of pepper in a bowl

It is best if the strawberries sit for an hour so, put the bowl in the fridge and go mingle with your guests…

After dinner, pop back in the kitchen and in small dessert dishes or ramekins layer –

1 teaspoon of Ricotta on the bottom to soak up all the yummy sauce
Topped with a layer of your strawberry mix
Finished with a layer or ricotta

For an easy garnish a dash of pepper and a few drops of the strawberry juice do wonderfully. But…

If your feeling extra decadent nothing is better than a quick drizzle of raw local honey, crushed pecans and a few drops of vanilla extract or amoretto on top to really bring out the strawberries.

It is best to stick with berries they pack a major antioxidant punch with less sugar than most fruits but other than that get creative and find a mix that suits you!
